Well, sea food for me represents my own life&#8230; If we are what we eat I&#8217;m certainly a sea element. Since forever, seafood has always been present in my family and in my kitchen thanks to my father, a Sicilian who moved to Rome, a great chef and above all a great connoisseur of Sicilian seafood recipes. <span class=\"\">His way to feel close to his distant homeland was to remember the sea and its flavors.<\/span> Therefore, f<span class=\"\">or me to specialize in seafood recipes and to use so much fish mean returning to my origins and constantly feeding my roots!<\/span><\/span><\/p>\n<p><strong>2) <span id=\"result_box\" class=\"\" lang=\"en\"><span class=\"\">How do your dishes take inspiration from Sicily, cradle of a great cuisine based both on seafood and soil product?<\/span><\/span><br \/>\n<\/strong><\/p>\n<div id=\"gt-res-content\">\n<div id=\"gt-res-dir-ctr\" class=\"trans-verified-button-small\" dir=\"ltr\"><span id=\"result_box\" class=\"\" lang=\"en\"><span title=\"Come detto prima io ho un rapporto con la Sicilia fortissimo, grazie a mio padre, ma direi in generale tutta la mia famiglia.\">As I said earlier, I have a strong connection with Sicily, thanks to my father, but I would say in general to all my family. <\/span><span title=\"Se dovessi scegliere un posto simbolo di questo rapporto indissolubile nominerei Catania e il suo mercato (ndr. si chiama Pescheria).\">If I had to choose a symbol of this indissoluble relationship, I would mention Catania and its market (called Pescheria). <\/span><span title=\"Credo li si possano trovare alcune dei migliori sapori del mondo e non mi riferisco solo al pesce, ma anche alle verdure, formaggi, carne e a tutto quello che \u00e8 legato all\u2019aspetto regionale ed ovviamente al vero made in italy inimitabile.\">I think there you can find some of the best flavors in the world and I&#8217;m not just talking about fish, but also vegetables, cheese, meat and anything related to the region, and of course the real made in Italy food. <\/span><span title=\"L\u2019amore per la Sicilia ha un altro segreto per\u00f2.\">Love for Sicily has another secret though. A<\/span><span title=\"Noi, come famiglia, siamo stati dei privilegiati perch\u00e9 sempre viaggiavamo in Sicilia come ospiti di amici e parenti, dove l\u2019ospite \u00e8 davvero sacro, ottenendo trattamenti speciali.\">s a family, we have been lucky because we always travelled in Sicily as guests of friends and relatives, in a land where the guest is really something sacred, getting special treatments. <\/span><span title=\"In quelle situazioni ho imparato tantissimo dai piatti e dalla mescolanza di sapori, proprio perch\u00e9 loro portavano a tavola il meglio delle ricette.\">In those situations I learned a lot from the dishes and the mixture of flavors they brought to the table, just because they offered us the best recipes. <\/span><span title=\"Ovviamente anche noi ricambiamo gli inviti ed ogni volta che mio padre andava a fare la spesa alla pescheria io ero con lui.\">Obviously we also treated the invitations back and whenever my dad went shopping at the local market I was with him. <\/span><span title=\"Ho imparato molto sin da piccolo, in primis a fare la spesa e poi naturalmente ai fornelli seguendo il suo modo di cucinare.\">I&#8217;ve learned a lot since I was a child, first of all during grociery shopping, and of course, at the stoves, following his way of cooking.<\/span><\/span><\/div>\n<\/div>\n<p><strong>3) What&#8217;s your relationship with the guest at your restaurant, La Rosetta?<br \/>\n<\/strong><\/p>\n<p><span id=\"result_box\" class=\"\" lang=\"en\">Clearly I try to build a very close relationship with my guests. <span class=\"\">I try to make them feel at home, also relying on the design and architectural aspects of this place, furnished in order to recreate an atmosphere that focuses on human warmth and not on the detachment between customer and restaurant.<\/span> <span class=\"\">And then of course I tend to reinforce that feeling that leads me to take care of my guests with sacredness, according to the Sicilian culture.<\/span> <span class=\"\">My purpose and hope is that my guests, once left the restaurant, can mentally retrace the memories and the pleasure of La Rosetta&#8217;s sea flavors, from which they can get the greatest satisfaction.<\/span> <span class=\"\">I also try to lure them in with good food&#8230; Anyway, many of my guests and customers have become friends over the years and I confess something: I listen to their advices and feedback.<\/span> It&#8217;s important.<\/span><\/p>\n<p><strong>4) What&#8217;s in your opinion the strenght of made in Italy, of our food and our food culture?<\/strong><\/p>\n<p><span id=\"result_box\" class=\"\" lang=\"en\"><span title=\"Prover\u00f2 a darti una risposta non accademica, estremamente sincera e oserei dire un po\u2019 critica.\">I&#8217;ll try to give you a non-academic answer, extremely sincere and, let&#8217;s say, a bit critical. I think we should raise the concept of food made in Italy. <\/span><span title=\"Per me il made in italy del nostro cibo andrebbe reso, come concetto, pi\u00f9 elevato.\">I<\/span><span title=\"Intendo dire che dovrebbe rispondere a dei parametri oggettivamente altissimi.\"> mean, it should respond to objectively high parameters. <\/span><span title=\"Sfortunatamente negli ultimi anni assistiamo ad un\u2019inflazione di questo marchio e ci\u00f2 va , purtroppo, a inficiarne il significato.\">Unfortunately, over the last few years, we are experiencing a overuse this brand and, unfortunately, it undermines its meaning. <\/span><span title=\"Abbiamo la cucina, quella italiana, che rappresenta il punto pi\u00f9 alto dell\u2019espressione del cibo, ma a volte siamo noi stessi a non accorgercene.\">The Italian cuisine is the highest point of food expression, but sometimes we are not aware of it. <\/span><span title=\"Ad esempio all\u2019estero si preparano dei piatti tipici della nostra cucina con solo in parte prodotti italiani, ma alla fine il tutto viene proposto come \u201ccibo made in italy\u201d.\">For example, we prepare typical dishes of our cuisine\u00a0abroad with Italian products only in part, but in the end everything is proposed as &#8220;made in Italy food&#8221;. <\/span><span title=\"Questo \u00e8 sbagliato perch\u00e9 rovina il nostro made in Italy.\">This is wrong because it ruins our made in Italy. <\/span><span title=\"Ma anche da noi in Italia assistiamo a utilizzo di prodotti italiani con modi di cucinare lontani dalla nostra cultura.\">But even here in Italy we can find a way of using Italian products away from our culture. <\/span><span title=\"Quello che voglio dire \u00e8 che ormai il vero made in italy, quello del cibo 100%, non \u00e8 facile da trovare e da riconoscere.\">What I mean is that nowadays it&#8217;s hard to find and recognize the true made in italy, the 100% Italian food. <\/span><span title=\"La mia filosofia \u00e8 nota, cerco di esaltare il gusto delle materie prime italiane rispondendo anche ai canoni di preparazione, cercando riferimenti con quella regione, quel posto.\">My philosophy is well known, I try to exalt the taste of Italian raw materials by following the preparation fees, looking for references to this specific region, to that specific place. <\/span><span title=\"Ecco perch\u00e9 mi piace anche curare il profumo del miei piatti, per me questo \u00e8 il vero made in italy.\">That&#8217;s why I also like to take care of the scent of my dishes, this is the true made in Italy for me. Certainly a made in Italy made of p<\/span><span title=\"Prodotti certamente, ma anche preparazione, produzione, cultura e riferimenti regionali, che noi italiani abbiamo nel sangue.\">roducts, but also preparation, production, culture and regional references that Italians have in the blood.<\/span><\/span><\/p>\n<p><strong>5) <span id=\"result_box\" class=\"\" lang=\"en\"><span class=\"\">Speaking of Italian food, one of the phenomena we face daily in promoting our cuisine is the <em>Italian<\/em> <em>sounding<\/em>.<\/span> In your opinion, is t<span class=\"\">here something that&#8217;s missing in the defense of our food and that we should adopt to defend it?\u00a0<\/span><\/span><\/strong><\/p>\n<p><span id=\"result_box\" class=\"\" lang=\"en\"><span title=\"Questa domanda centra un problema di copyright che ovviamente fa riferimento all \u201citalian sounding\u201d.\">This question must consider a copyright issue that obviously refers to &#8220;Italian sounding&#8221;. The <\/span><span title=\"Il patrimonio alimentare italiano \u00e8 unico al mondo per qualit\u00e0 ed assortimento.\">Italian food heritage is unique in the world for quality and diveristy. <\/span><span title=\"Noi abbiamo l\u2019olio e la pasta pi\u00f9 buona , abbiamo quasi tutte le specie di vegetali e produciamo dei vini unici.\">We have the best oil and pasta, we have almost all plant species and we produce unique wines. <\/span><span title=\"Tutto ci\u00f2 non \u00e8 solo merito della materia prima in quanto entrano in gioco anche i criteri di preparazione che sono unici al mondo e difficilmente riproducibili.\">All this is not just thanks to the raw materials because even the preparation criteria are unique and difficult to reproduce anywhere else. <\/span><span title=\"La cultura gastronomica e i prodotti agroalimentari italiani sono famosi ed apprezzati ovunque ma purtroppo anche contraffatti, lo sappiamo bene.\">The Italian food culture and agri-food products are famous and appreciated everywhere but unfortunately also forged, and we know it well. <\/span><span title=\"Penso che bisognerebbe creare un marchio davvero molto stringente sul made in italy, una specie di certificazione reale e severa, altrimenti chiunque pu\u00f2 scrivere made in italy e ingannare il cliente.\">I think we should create a very strict brand on Made in Italy, a kind of real and severe certification, otherwise anyone can write Made in Italy on a product and mislead the customer. <\/span><span title=\"Penso quindi ad un ente certificatore con regole molto dettagliate e precise, quasi un bollino per intenderci, naturalmente costosa.\">So I&#8217;m thinking of certification authority with very detailed and precise rules, maybe an expensive stamp. <\/span><span title=\"L\u2019Italia, sul cibo deve anche puntare al mercato di un certo livello.\">Italy must target a high level market with its food. <\/span><span title=\"La qualit\u00e0 ha un prezzo, che chi pu\u00f2 sar\u00e0 felice di pagare.\">Quality has a price that whoever can afford will be happy to pay for. <\/span><span title=\"Noi abbiamo questa qualit\u00e0 ma ci vuole un progetto ulteriore che valorizzi il cibo, fissando delle regole severe che certifichino il vero made in italy, altrimenti la contraffazione dilagher\u00e0 sempre di pi\u00f9.\">We have this quality but we need a further project that enhances the food, setting strict rules that certify the true made in Italy, otherwise counterfeiting will expand more and more.<\/span><\/span><\/p>\n<p><strong>6) What are your future plans? <\/strong><\/p>\n<div id=\"gt-res-content\">\n<div id=\"gt-res-dir-ctr\" class=\"trans-verified-button-small\" dir=\"ltr\"><span id=\"result_box\" class=\"\" lang=\"en\"><span title=\"Beh non \u00e8 facile rispondere, visto il globale e perdurante momento di incertezza.\">Well, it is not easy to answer, given the global and lingering moment of uncertainty. <\/span><span title=\"Mi piacerebbe continuare a investire in Italia e puntare sulla qualit\u00e0 del cibo e dei nostri prodotti e sui giovani Ad esempio il ristorante La Rosetta, che per me rappresenta la mia casa, il mio punto di riferimento.\">I would like to keep investing in Italy, focusing on the quality of food, our products and young people.
