{"id":43314,"date":"2017-07-18T17:34:26","date_gmt":"2017-07-18T15:34:26","guid":{"rendered":"https:\/\/iloveitalianfood.it\/gelato-allo-yogurt-variegato-al-lampone-en\/"},"modified":"2018-01-04T16:29:23","modified_gmt":"2018-01-04T15:29:23","slug":"gelato-allo-yogurt-variegato-al-lampone-en","status":"publish","type":"post","link":"https:\/\/iloveitalianfood.it\/en\/gelato-allo-yogurt-variegato-al-lampone-en\/","title":{"rendered":"Raspberry swirl yogurt gelato"},"content":{"rendered":"<p><span class=\"ricetta-difficolta\">DIFFICULTY: <span class=\"ricetta-difficolta-dettaglio\">4<\/span><\/span><br \/>\n<span class=\"ricetta-tempo\">4 hours and 40 minutes<\/span><br \/>\n<span class=\"ricetta-ingredienti-titolo\">INGREDIENTS PER 6 PEOPLE<\/span><\/p>\n<p class=\"ricetta-ingredienti\">plain yogurt, 1 \u00bd cup<br \/>\nwhite sugar, \u00bd cup<br \/>\n whole milk, 3\/4 cup<br \/>\ncarob flour, \u00bd teaspoon<br \/>\nraspberries, 1 cup<br \/>\nlemon juice, 1 tbsp<br \/>\nZest of \u00bd lemon<br \/>\nwhite sugar, 2 tbsp<\/p>\n<p><span class=\"ricetta-procedimento-titolo\">PROCEDURE<\/span><\/p>\n<p class=\"ricetta-procedimento\">Preheat the gelato machine before putting the bowl in. For the raspberry coulis: in a saucepan add the raspberries, 30 grams of sugar, a tablespoon of lemon juice and zest of half a lemon. Cook for 5-6 minutes over low heat. Strain the mixture to remove the raspberry seeds and let it cool in the refrigerator for at least 4 hours.<br \/>\nIn a saucepan add the milk, the carob flour, 90 grams of sugar and bring the mixture to a temperature of 85 \u00b0 C. Turn off the heat, let the mixture cool to room temperature and then refrigerate the custard until it is cold for 4 hours.<br \/>\nThe base can be made the night before, just let it rest in the refrigerator.<br \/>\nOnce the base is cool add  yogurt, mix well, pour the mixture into the basket of the gelato machine (for me Il Gelataio ICK5000 De Longhi).
