INGREDIENTS PER 6 PEOPLE

For 25 cookies:
wheat flour, spelled and kamut, 4 cups
sugar, 1/2 cup
corn oil, 1,7 oz
egg whites, 2
dry white wine, 3 tbsp
baking powder, 1 tbsp
the grated rind of half a lemon
a pinch of salt
brown sugar for brushing

PROCEDURE

Mix all the ingredients forming a ball and refrigerate for half an hour. Divide the dough into many pieces and form the sticks with floured hands, cut them all to the same length and close them like a ring. Place the biscuits on a sheet of baking paper, brush with the beaten egg white and sprinkle with brown sugar. Bake at 356° for 20 minutes, let cool on wire rack. Taste the cookies with fresh fruit and a glass of sweet wine. They’re great!
