The tomato purée has basically originated from one need: in the past, towards the end of the summer, you had to find a way to preserve as long as possible the tomato.
Some time ago, make tomato purée and seal it in glass jars was a habit of many families.
The tomato purée is made from ripe tomatoes which have been puréed and “passed” through a sieve to remove the skin and seeds.
It is then stored in jars and boiled for 10 minutes and that will create a vacuum seal and allow the tomato purée to last for a long time.
