INGREDIENTS PER 4 PEOPLE

olive oil, 4 tbsp
rosemary, one sprig
thyme, one spring
pastry flour, 5 cups
fennel seeds
sage leafs
brown sugar, 2 tbsp
dry yeast for bread making, 1 sacket (fresh yeast, 0,9 oz)
milk, 1 cup
salt, 1 tsp
eggs, 2

PROCEDURE

Make the dough by dissolving the yeast in some warm milk with flour, one egg, oil and the remaining milk and salt. Work the dough with hands to reach a smooth consistency. This will take about 10 mins; so shape it into a ball and put it in warm place covered with a cloth for 1 hour.
Wash and chop the herbs finely and add the herb mixture to the dough and work it again energetically for 5-10 mins. Make 12-14 small and smooth balls.
Put the balls next to each other on a greased baking tray making the shape of a bunny, a lamb, a chick or any shape you like. Drizzle some extra herbs on top. Let the bread rest for another hour covered with the cloth.
Beat an egg with 2 tablespoon of brown sugar and brush the bread with it.
Cook at 200° C for 25 mins until golden.
