INGREDIENTS PER 6 PEOPLE
Flour, 2.8 oz
Butter, 3.5 oz
Cheese like Latteria, 2.5 oz
Milk, 17 fl oz
For the besciamella: in a nonstick saucepan, heat the butter until melted, add the flour and then the milk.
Cook the mixture, stirring, on medium heat for 5-6min until it gets thicker.
Remove the sauce from heat and season with diced cheese and four egg yolks.
Separately, beat egg whites until very stiff.
Add them into the mixture with the yolks.
Pour the mixture into 6 small molds, bake for 40 minutes at 347°F, on static mode.
When they are cold unmold them and eat once warm or at room temperature.
