INGREDIENTS PER 2 PEOPLE
Boiled Water or Vegetable Stock
Butternut Squash, 14 Oz
Curry Powder, 1 tsp
Extra Virgin Olive Oil
In a pot, fry the vegetables – cut into chinks – for a few seconds. Add water or vegetable stock and let them boil for 20-30′. When ready, blend them with a hand blender. Put once again on the stove for a few seconds, stirring. If you want you can add a table spoon of creme fraiche, or milk, just to make it richer and smoother.
Enjoy with warm garlic-flavoured croutons!
