INGREDIENTS PER 2 PEOPLE
penne or mezze penne pasta (or other type of medium pasta), 5 oz
vodka, 1/4 cup
smoked salmon cut into bite-sized pieces, 3,5 oz
cream, 1/2 cup
cherry tomatoes, 10
tomato paste, 1/2 tbsp
chopped onion, 1/2
Heat oil in a large saucepan over medium heat and add the minced onion. Toss for a while, stirring to avoid overcooking. Meanwhile boil the water for pasta.
Add salt and cook penne “al dente”. Put salmon into the saucepan and wait two minutes, add vodka and let it evaporate.
Cut cherry tomatoes into quarters. Add them to the salmon. Cook for two minutes, add tomato paste and then the cream.
Simmer for a couple of minutes, add parsley and pepper. Drain pasta and drop it in the pan with the sauce. Serve hot.
