PDO Bra cheese is typical of the valleys around Cuneo and it is called after the main city in the Roero area, a fertile area on the border between the hills – Langhe – and the flat land. It is produced and ripened in the whole province of Cuneo. PDO Bra cheese is a cow’s milk cheese and it can be either soft, after at least 45 days of aging, or hard, after at least 180 days of aging. The soft Bra cheese is the best one to be served. The maturation phase may also take place in Villafranca Piemonte, in the Turin province.
