INGREDIENTS PER 4 PEOPLE

Chicken breasts, 4
Cherry tomatoes, 6,4 Oz
Capers, 1 Tablespoon
Lemon, 1
Olives, 10
Flour for coating
Basil leaves
Cloves of garlic, 2
Olive oil
Salt
Pepper

PROCEDURE

Cut the chicken breasts into thin slices then beat them with a kitchen hammer and coat them with flour.

Heat 4 tbsp of olive oil in a pan then stir fry the chicken on both sides for 3-5 minutes.

Grate the rind and squeeze the juice of the lemon over the chicken then turn the heat down and add cherry tomatoes, capers, olives, garlic cloves, salt and pepper and the basil leaves.

Continue cooking for another few minutes until the chicken looks nice and golden.
