INGREDIENTS PER 4 PEOPLE

courgettes, 2
aubergine, 1
salami, 3,5 oz
Parma ham, 3,3 oz
ham steak, 3,5 oz
Parmesan cheese, a chunk
mozzarella, 16 small balls (bocconcini) or 3 large ones
mixed olives
cherry tomatoes
capers
rocket, 3,5 oz
sundried tomatoes
bresaola, 3,5 oz
olive oil
balsamic vinegar
breadsticks
basil leafs

PROCEDURE

Wash and cut aubergines and courgettes into thin slices.
Heat a griddle pan, when very hot lay the vegetables over it for a couple of minutes each side. Put on a plate, dress with balsamic vinegar and olive oil.
Sprinkle some oil over the rocket then, lay it over a tray, a large plate or a wooden chopping board.
Arrange all the meat, cheese, vegetables, capers, olives and tomatoes, starting from the centre.
If you want, roll the aubergine slices to make roses. The same can be done with meat. Follow your creativity.
Garnish with some basil leafs in the middle of the dish.
