INGREDIENTS PER 7 PEOPLE

Puff pastry, 14,4 Oz
Potatoes , 4
Red onion, 1
Grated Fontina DOP cheese, 10,2 Oz
olive oil
rosemary
salt

PROCEDURE

Preheat the oven to 180 C. Slice the onion and gently fry in a pan with olive oil for about 5 minutes, until soft. 
Peel the potatoes and slice them very thin in a food processor. 
Wash them to remove the starch and blot with some paper to dry them well. In a large bowl mix together onion, sliced potatoes and the grated cheese, add some salt and fresh rosemary. 
Line the pastry in a baking tray and spread over with the mix. Sprinkle some olive oil on the top and a little more grated Fontina cheese. Cover the tray with foil and put in the oven for 10 minutes. 
Remove the foil and continue to cook for 10/15 minutes more until the pastry is well golden. Serve luke-warm.
