INGREDIENTS PER 2 PEOPLE

Buttermilk, 8 Oz
Sugar, 2,3 Oz
Unflavored Gelatin, 0,2 Oz
Strawberries; hulled, quartered, 1,8 Oz
Orange Liqueur, 1 Cucciaio
Heavy cream, 2,6 Oz

PROCEDURE

In the top of a double boiler (not directly over the heat), sprinkle gelatin over 1/2 cup buttermilk and let stand to soften, for about 5 minutes. Then place water in the bottom of the double boiler and bring to a simmer.

Bring cream and 3 tablespoons sugar to a boil in a separate small pan.

Add it to the gelatin mixture in the top part of the double boiler and place the pan over the simmering water; whisk until gelatin dissolves, about 5 minutes. Stir in remaining buttermilk thoroughly with a whisk.

Divide the mixture into two dessert bowls. Cover; refrigerate until set, for about 4 hours.

Meanwhile, mix strawberries with orange liqueur and sprinkle with the remaining sugar. Let stand for about 1 hour. Top panna cotta with the strawberries and the juice collected in the bowl.
