INGREDIENTS PER 2 PEOPLE
Onion, 1
Carrot, 1
Olive oil, 2 Spoons
Medium pink Radicchio, 2
Vegetable stock, 17 Oz
Salt
Pearl barley, 1,8 Oz
Spelt, 1,8 Oz
Black pepper grinded when served
PROCEDURE
Wash and mince the onion and the carrot, put them in a pot with some oil and some spoon of stock until the lightly brown.
Add all the stock, and when it boils add the chopped pink radicchio, some salt and the pearl barley. Let it steam at low temperature.
The cooking time for the pearl barley is 30 minutes so after 15 minutes add the spelt they are gonna be both cooked properly.
Serve with some oil and grinded pepper.
